Fiesta Lettuce Wraps

This raw food recipe is like a healthy version of Mexican tacos. It is one of my favorite recipes for a raw food detox diet because it gives you so much flavor while supporting your goals of cleansing your body.

The Avocado Tomatillo Salsa is very much like a Mexican Salsa Verde. If you can’t find fresh tomatillos you can simply leave them out and add an extra tablespoon of lime juice, plus water as necessary for blending.

I like the salsa to be moderately spicy but you can easily adjust the heat level by altering the amount of jalapeno to suit your own personal preference.

For the pico de gallo I’ve provided a basic outline but it also is fantastic if you add some diced fresh mango. The sweetness of the mango is amazing with the spicy jalapeno.

This recipe makes two servings and only uses half of the salsa. Leftover Avocado Tomatillo Salsa will keep for a few days in a sealed container in the fridge. You can use the extra salsa to make another portion of lettuce wraps, eat it like a dip with raw veggie crudites or as a salad dressing.

Ingredients

  • 6 inner leaves of romaine lettuce

  • Avocado Tomatillo Salsa:

  • 1 medium avocado
  • 3/4 cup fresh tomatillo chopped
  • 2 green onions sliced
  • 2 tablespoons cilantro chopped
  • 1/2 jalapeno pepper chopped
  • 1/2 teaspoon Himalayan salt
  • 1-2 tablespoons water as needed

  • Pico de Gallo:

  • 1 1/2 cups tomato diced
  • 2 tablespoons red onion diced small
  • 2 tablespoons cilantro chopped
  • 1/4 jalapeno pepper diced
  • 1/2 tablespoon lime juice
  • Dash of Himalayan salt

Instructions

  • First prepare the Avocado Tomatillo Salsa by placing tomatillo, green onions, cilantro, jalapeno, lime juice and salt in a food processor or blender. Add water if necessary to facilitate blending the ingredients into a smooth sauce.
  • Add avocado and blend on low speed just until smooth and creamy.
  • To prepare the Pico de Gallo place all ingredients in a small mixing bowl and stir to combine.
  • To serve, place romaine lettuce leaves on a plate and spoon Pico de Gallo inside.
  • Use half of the Avocado Tomatillo Salsa and arrange this on top of the lettuce leaves.

Notes

    Good Grief these things are tasty!!! I added black beans to mine. My hubby is Mayan and craves meals like this. Trying to wean him off of corn tortillas is like stealing a bone from a hungry pooch. Love the healthy twist of using a lettuce leaf.. so simple but so much healthier!!!
