Today I have a delicious smoothie recipe for you featuring the superfood, lucuma.
Lucuma is a South American fruit that makes a fantastic addition to smoothies. It is available as a powder that is produced from whole lucuma fruit – like this one made by Terrasoul – that is grown organically.
It is low-glycemic, rich in antioxidants, and has been scientifically documented to have an anti-inflammatory and anti-aging effect. In Ancient Peru lucuma was regarded as a symbol of fertility and creativity.
Lucuma has an aromatic, sweet fragrance and full-bodied taste reminiscent of maple or caramel. In Peru, it is used as an addition to ice-cream. It works really well as an ingredient in raw banana ice cream especially with dates or maple syrup.
This combination with mango, dates, almond milk, vanilla, and cinnamon makes for a luscious breakfast or healthy snack.
Ingredients
- 1 1/2 cups fresh or frozen mango cubed (about 1 medium mango)
- 3/4 cup vanilla almond milk
- 1 medjool date
- 1 tablespoon lucuma powder
- Dash of cinnamon
- Optional: a few ice cubes if using fresh mango
Instructions
- Place all ingredients in a blender and blend until smooth and creamy.
- Pour into a glass and enjoy immediately.
