Raw Vegan Sushi

Sushi is a major source of parasites in the diet because of the raw fish. But don’t think it is safe to eat vegan sushi in a restaurant.

Cross-contamination can occur because the chefs will use the same knives and rolling mats to prepare vegan sushi as they do for everything else. It just takes one parasite cyst to cause an infection so if you have any health issues I recommend you consider avoiding sushi restaurants altogether.

This raw vegan version can help satisfy your cravings for sushi and is also beneficial for your health. Full ingredients and recipe instructions are below.

Raw Vegan Sushi

Ingredients

Sushi Rice

  • 6 cups roughly chopped jicama
  • ½ cup almonds
  • 1/4 cup rice vinegar
  • 3 Tablespoons agave
  • 1 Tablespoon salt

Sushi Fillings

  • 8 sheets nori
  • 1 cucumber julienned
  • 1 carrot julienned
  • 3 thinly sliced shiitake mushrooms
  • 1 bunch sprouts
  • 3 scallions thinly sliced
  • 2 avocados
  • ½ cup nama shoyu soy sauce/tamari for dipping

Instructions

  • Place the jicama in a food processor a little at a time and pulse until it looks like rice.
  • Add almonds to food processor and pulse until finely chopped. Add to your bowl of jicama and mix together.
  • Pour mixture onto a dry, clean towel and press another towel on top to remove excess moisture.
  • Pour mixture back into a large bowl, and add rice vinegar, agave, salt and mix.
  • Place a sheet of nori on your cutting board or sushi rolling mat (smooth side down), add ⅓ cup of rice leaving about an inch around the edges, add filling ingredients.
  • Fold the nori up and over the filling and roll tightly, wetting the top edge of the nori with a little water or rice vinegar to seal it.
  • Cut the roll into little pieces wiping your knife with a damp towel between cuts
  • Serve with nama shoyu and wasabi.

  1. Parasites seem to be a major concern now-a-days, whether eating out or buying foods from another country. Does the raw vegan diet eliminate them naturally?

    1. Hi Nicole,

      Unfortunately not. Parasites are just part of life and it is virtually impossible to eliminate exposure entirely. Raw and undercooked meats however are one of the major sources in the diet and some of the parasites from animals are potentially dangerous – such as tapeworms from pork, beef and fish, which can sometimes make it into the brain and have been implicated in seizures.

      Eat a vegan diet reduces your level of exposure but raw vegetables can certainly be a source of other parasites like Giardia and roundworm cysts, especially in tropical countries where they are grown in contaminated water. Washing your vegetables can reduce the risk but not eliminate it entirely.

      That is why is it a good idea for everyone to do a comprehensive parasite cleanse and then follow up at least twice a year with a maintenance program.

      You will never get rid of all of your parasites but regular cleansing and following a high raw diet keeps the amount down to the level so that they don’t negatively affect your health.

  2. Hi Mizpah: There are many products out there, claiming this and that. Have felt for a while that parasites could be one of my problems. Many of the signs of parasites could also be healing crises, organ problems, cleansing problems, like rashes, breakouts, tired, digestive issues, bloating, etc. Would you mind explaining the comprehensive parasite cleanse than a follow up that you do so that we can know how to proceed properly.   3. Hi Mizpah, sorry disregard the last comment, just noticed “Cleanse Programs” where there is a way to cleanse parasites, unless you can provide more information to help. Smiles
