Spicy Black Bean Taco Wraps with Guacamole & Mango Salsa

These vegan spicy black bean taco lettuce wraps are perfect for summer.  They’re also great anytime you want to get a healthy plant-based meal on the table in about 20 minutes. I love the combination of guacamole with the Spicy Mango Salsa.

It offers a perfect balance of raw and cooked ingredients to create a meal that will leave you feeling nourished and light.

Black beans are a fantastic source of protein for those following a plant-based diet. They’re also a rich source of fiber, which can help to support a healthy microbiome. Canned beans make this very convenient, but it’s always better to prepare them from scratch if you have the time and are able to plan ahead.

Ingredients

Black Beans

  • 2 tbsp extra virgin olive oil
  • 1 15 oz can black beans
  • 2 tbsp water
  • 1 tsp cumin ground
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp Mexican oregano
  • Himalayan salt and black pepper to taste
  • 1/2 medium red bell pepper (optional) finely diced

Guacamole

  • 2 large avocados
  • 1 medium tomato
  • 3 tbsp fresh lime juice
  • 2 tbsp cilantro minced
  • 1/2 medium jalapeno pepper finely diced
  • Himalayan salt and black pepper to taste

To Serve

Instructions

  • Heat the olive oil in a frying pan over medium heat. Add the black beans, water, cumin, smoked paprika, chili powder, cayenne, and Mexican oregano. Then season with salt and black pepper to taste, and stir to combine.
  • Cook, occasionally stirring, until the beans are warmed throughout, and the spices become fragrant; around 4-5 minutes. Remove from heat then set to the side.
  • While the beans cook, mash the avocado in a small glass or other non-reactive bowl. Add tomato, fresh cilantro, lime juice, and jalapeño. Season to taste with salt and black pepper, then stir to combine. Set aside.
  • Transfer the warm beans to a bowl and add the optional diced bell pepper if using. Scoop individual portions of the beans into large lettuce leaves for wrapping, along with fresh guacamole and mango salsa. Serve immediately. Enjoy!
