Strawberries and cream is a classic combination that everybody loves. In this dairy-free smoothie, we get the creaminess from hempseeds and lecithin.
Hemp seeds provide a lot of nutritional benefits being a good source of protein and essential fats. However, raw cashews or macadamias are a great alternative if you don’t have hemp seeds on hand.
Strawberries are one of the crops that are known to contain high levels of pesticides so it really is best if you can find an organic source of strawberries. Alternatively, you could substitute another type of berry in this recipe such as blueberries or raspberries.
The beet may seem like an unusual addition but it intensifies the color, creating a beautiful bright pink hue, while also adding extra nutrition. Beets have long been regarded as providing benefits for the liver and digestive system. Recent studies also suggest that beets can enhance athletic performance.
Make sure you use non-GMO lecithin powder to avoid any potentially negative effects associated with genetically modified foods. You could also choose to leave the lecithin out altogether but your shake won’t be quite as creamy.
Although technically this is a green smoothie because of the addition of romaine lettuce, you probably won’t even notice it. The vibrant pink color and sweet creaminess of this shake make it a perfect way to sneak some healthy greens into your diet. Kids will love this recipe too!
Strawberries and Cream Shake
Serves 2
2 cups water
1⁄4 cup hemp seeds
Pinch of Himalayan salt
1⁄4 cup chopped beet
3 tablespoons raw honey or agave
1 tablespoon lecithin powder (optional)
1 teaspoon vanilla bean powder (or 1 tablespoon natural vanilla extract)
2 cups frozen strawberries
1 cup romaine lettuce
Add all ingredients except strawberries to blender and combine until smooth. Add strawberries and romaine and blend until smooth and creamy.
