Fiesta Lettuce Wraps

This raw food recipe is like a healthy version of Mexican tacos. You can adjust the spice level by modifying the amount of jalapeno to suit your own personal preference.

Ingredients

  • 6 inner leaves of romaine lettuce

  • Avocado Tomatillo Salsa:

  • 1 medium avocado
  • 3/4 cup fresh tomatillo chopped
  • 2 green onions sliced
  • 2 tablespoons cilantro chopped
  • 1/2 jalapeno pepper chopped
  • 1/2 teaspoon Himalayan salt
  • 1-2 tablespoons water as needed

  • Pico de Gallo:

  • 1 1/2 cups tomato diced
  • 2 tablespoons red onion diced small
  • 2 tablespoons cilantro chopped
  • 1/4 jalapeno pepper diced
  • 1/2 tablespoon lime juice
  • Dash of Himalayan salt

Instructions

  • First prepare the Avocado Tomatillo Salsa by placing tomatillo, green onions, cilantro, jalapeno, lime juice and salt in a food processor or blender. Add water if necessary to facilitate blending the ingredients into a smooth sauce.
  • Add avocado and blend on low speed just until smooth and creamy.
  • To prepare the Pico de Gallo place all ingredients in a small mixing bowl and stir to combine.
  • To serve, place romaine lettuce leaves on a plate and spoon Pico de Gallo inside.
  • Use half of the Avocado Tomatillo Salsa and arrange this on top of the lettuce leaves.

Notes

Leftover Avocado Tomatillo Salsa will keep for a few days in a sealed container in the fridge.
If you can't find fresh tomatillos you can simply leave them out and add an extra tablespoon of lime juice, plus water as necessary for blending.
