Ingredients

  • 3 cups arugula
  • 1 cup papaya sliced
  • 1/4 cup red onion sliced thinly
  • 1/2 tbsp lemon juice freshly squeezed
  • 1 tbsp extra virgin olive oil
  • 2 tbsp walnuts chopped
  • 1 dash Himalayan salt
  • freshly ground black pepper to taste

Instructions

  • Place all ingredients in a large salad bowl and toss to combine well.
  • Enjoy immediately.

Notes

If desired, soak onion in lemon juice for 5-10 minutes, to make their taste milder.
