Almost everyone loves Caesar salad but unfortunately, the original version is loaded with unhealthy saturated fats. Here is a raw vegan recipe for Caesar salad that is delicious as well as being good for you!
The Parmesan “Cheese” also makes a great topping for zucchini pasta with marinara sauce.
Ingredients:
Serves 2-3
Salad:
1 head romaine lettuce
1/2 cup capers
Dressing:
1 avocado
1/4 cup raw cashews
1/4 cup water
1 Tablespoon lemon juice
1 Tablespoon apple cider vinegar
1/2 -1 Tablespoon light miso
1/2 -1 teaspoon pepper
1 clove garlic
1 teaspoon honey (use agave to make recipe 100% vegan)
Parmesan “Cheese”:
1 cup cashews
1/2 teaspoon sea salt
1 clove garlic
Directions:
To make Parmesan ‘cheese’ add garlic clove and salt to your food processor or blender and mix. Add cashews and blend until it becomes a fine powder. Set aside.
Blend all dressing ingredients until smooth. Place chopped romaine and capers in a large salad bowl and toss with dressing.
Place in individual serving bowls and top with Parmesan “Cheese”.
Honey is not vegan. It is an animal product. Agave should be used to make these recipes that call for honey, vegan.

This salad is divine!!! Caesar salad has been a favorite of mine most of my life, I’ve been searching for a tasty vegan, or almost vegan substitute.
I DO use raw honey, I prefer not to be so fanatical about these things. Just interested in what feels best in my body.
